RedIguanaA group of us in Salt Lake City for a training course decided to try the Mexican food at Red Iguana, as they have a reputation of being known for their moles. Red Iguana has 2 locations : the original at 736 West North Temple and a second smaller location at the City Creek Center Food Court on S. State Street. The original location was closer to our hotel since we didn’t have a car and decided to walk.

Red Iguana is located in a slightly run-down area west of I-15. The restaurant is tucked next to a motel property, across from a home-town diner and other restaurants. Construction work makes getting to this area a little challenging. We arrived at 6:30pm and there was already a crowded/overflow line forming outside of the restaurant. We got seated in about 15 minutes, better than the estimated 7:00pm time. And during our wait, the restaurant staff offered hot chocolate to those of us waiting outside – a very nice touch.

RedIguana-MoleSamplerWe started with the unadvertised mole sampler – this is a dish featuring a dollop of each of the mole sauces. The group agreed that the fruitier moles were the most flavorful and had a better depth in flavor. Based on our samples, we ordered the following mole dishes :

Mole Coloradito – the pork loin slices are covered with a delicious mole that has a good balance of spice and herbs. The chocolate gives the mole a nice layer of flavor and the mix of various chiles provide just enough spicy bite.

Mole Verde – the green mole lends a fresh flavor dimension to the dish, and has a slighty sweet profile due to the onions.

Mole Negro – this dark mole is one of the fruitier flavored moles due to the inclusion of chocolate, raisins and bananas.

We also tried the Sopa de queso – this soup has a slightly vinegary taste and comes with lots of queso and vegetables. A great non-meat based soup.

Service was very good considering the crowded state of the dining space – our waitress was more than happy to list the ingredients in each mole sauce and that night’s specials. Table service was attentive – our water glasses were filled on a regular basis and our food was promptly delivered from the kitchen. If you’re in the Salt Lake City area and have a hankering for genuine Mexican moles, Red Iguana is a must stop!
